BEWARE. Replacing the blades when they become dull is beyond ridiculously difficult. It takes me over and hour, watching their tutorial video through the whole process, and I still can't do it. The next time it gets dull, I'm throwing it in the recycling bin.

I read that you can use to sous vide!!! Hoping that’s true. wondering how exactly it would work. I don’t have a sous vide currently and want the proofer for my sourdough but would be more willing to pay for this model if it can do sous vide as well as the proofing and slow cooking functions
Yes, the proofer works for Sous Vide! You simply need to use a stainless steel pot placed directly onto the proofer heating plate with the unit set to slow-cook mode. Then, you can set the temperature you'd like the water bath to reach. We do recommend using a probe thermometer to double-check the water temperature. Let us know if you have any other questions!

We recommend keeping a lid on your starter jar to prevent it from drying out on top.

Yes, it is mainly used for sourdough starter or levain. It can also be used for small batches of yogurt or other ferments.

Thank you for your videos. I have just bought my first dehydrator. I researched dehydrating meats and most of the research from health agencies say dehydrating raw meat can cause bad bacteria to grow and all meats and fish should be cooked first. This concerns me as all recipes in books and on youtube use raw meats for making jerky. I'm confused??? why the conflicting information. I would really appreciate your feedback.

Is this big enough to do bulk fermentation of 1 loaf?
Yes, some bakers have used it for this purpose. Because it is designed for starters, it is on the smaller side, but if you can find a container that will fit, you can certainly use it for that purpose.

I have proofed my sourdough loaf set at 77-78 degrees. I am wondering if the rise should be different when bulk fermentation is done compared to counter top at 68 degrees. Seems like I am missing something and either over or under fermentating. Do you look for less of a rise at this temp before you shape and put in frig? Any videos on this ?
We currently don't have any videos specifically on bulk fermentation, but we appreciate the suggestion! We generally recommend looking for about a 50% increase in your dough's volume before shaping and refrigerating it overnight. If you have specific questions or need more tailored advice, feel free to email us at contact@brodandtaylor.com. Including a photo of your dough or the finished loaf can be especially helpful in determining if your dough is over or under proofed.

Hello, I just received my warmer today. Plugged it in, set the temperature to 78 degrees, and waited about 10 min for it to heat up. It hasn't heated. Am I doing something wrong? Please advise!

A very detailed guide on making black garlic! As an active ingredient in some Asian cuisines like Black Garlic Chili Oil Noodles, it definitely does hit the right spots as a foodie! What isn't covered in this video though, is the deceptively large bulk of nutrients that black garlic actually gives. They're clinically known to improve blood sugar control, heart protection, brain health, liver health, increase immunity, and in some cases, even reduce the growth of colon cancer cells! You see, I moved into the states with my ailing parents for an exchange program. As a birthday gift, I did some research, shopped online and gave them a health supplement called Root King Q10 Black Garlic as a gesture for their support over the years. At the time, health supplements that use black garlic as an active ingredient was aplenty in the market, but I took the dive because it also advertised a combination of Q10, which made me think that the supplement way more effective than its humble packaging. Skip a few years, and well, their complexion, frequency of visits to the hospital, and general mood at home has gotten so much better. Been buying from the same brand Root King since then, but of course you should do your own research when it comes to health supplements. For me though, Root King Q10 Black Garlic (name's a handful) was the one that worked for my parents. If you get tired of eating dishes with black garlic, definitely try them out as a supplement for its health benefits!
